Cranberry Nut Bread 

1/2 c boiling water

2 TBSP margarine (I substitute butter)

1/2 c orange juice

1 c sugar

1/2 TBSP orange peel (I substitute 1-2 TBSP orange zest)

1 egg, beaten

2 c flour

1/2 tsp baking soda

1 1/2 tsp baking powder

Pinch salt

1 cup cranberries

1 cup nuts (I use walnuts)

Preheat oven to 350.  Put margarine/butter in 1 c measure.  Add 1/2 c boiling water. When margarine/butter is melted add 1/2 c of orange juice. In large bowl combine eggs, sugar and peel/zest until well mixed.  Add orange juice mixture, stir well to combine.  In small bowl combine flour, baking soda, baking powder and salt.  Add to liquids and stir to just combine.  Do not over mix.  Butter and flour loaf pan, pour in batter and spread evenly.  Bake 40 to 50 minutes.

Apple Pie

Filling

Apples of choice, peeled, cored and cut into slices.  Peel and cut enough to fill pie plate with large mound on top.  Put in large bowl.

1 c sugar

2 eggs

1/2 c brown sugar

2 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp cloves

2 TBSP flour

Combine sugar through flour and pour over apples.  Stir every few minutes to coat thoroughly.

Pie Crust

1 3/4 c shortening

4 c flour

2 tsp salt

1 TBSP milk

1/2 c boiling water

Preheat oven to 375.  Mix shortening, milk and water in a large bowl.  Add flour and salt.  Divide in half.  Roll out each piece between two sheets of wax paper.  Bottom sheet of wax paper should be taped to counter to keep from moving or bunching.  Roll until slightly bigger than pie plate.  Place 1 half of dough in pie plate, pour in apples and any juice from the bowl. Top with second half of dough, crimp edges and vent the top with a few cuts.  Place pie plate on sheet pan lined with foil.  Bake for 15 minutes, lower oven to 350 and bake for an additional 35 minutes.  When pie is golden brown, apples are tender and juices are bubbling it’s done.

Toll House Pie

2 Eggs

1/2 Cup  EACH – All-Purpose Flour, Sugar, Brown Sugar

1 Cup Butter (melted & cooled)

1 Cup Chocolate Chips

1 Cup Chopped Walnuts

1 Unbaked 9″ Pie Shell (Pastry, Graham Cracker, Oreo Crumb)

Preheat oven to 350.

In mixing bowl beat eggs until foamy, add flour and sugars.  Whisk until blended.  Add butter and stir until incorporated.  Add chocolate chips and nuts.  Pour into pie shell.  Bake for 1 hour.  Cool completely.  Can rewarm slightly before serving if you like.  Serve with ice cream, whipped cream, caramel sauce, etc.

Notes – Any combo of chocolate works well here.  I like a mix of dark, semisweet and milk.  I’ve done this with white chocolate and 1/2 dried cranberries, 1/2 walnuts.  Toasted nuts always taste better.  Very versatile and a lot of fun.

Swedish Apple Pie (Mom’s Recipe)

Enough sliced apples to fill pie plate

1 Tbsp sugar

1 tsp cinnamon

1 tsp nutmeg

3/4 Cup Butter (melted & cooled)

1 Cup Sugar

1 Cup Flour

1 Egg

1/4 Cup Nuts (walnuts or pecans)

Pinch Salt

Preheat oven to 350.  Put apples in pie plate, sprinkle w/sugar, cinnamon & nutmeg.  Blend remaining ingredients  and pour over apples.  Bake for 45 minutes.  Cool.  Serve warm with vanilla ice cream or whipped cream.
